EPA: FACTORY FARMS POLLUTE WITH NO RESTRICTION

This news is rather alarming, but not surprising, given the Bush administration's record on the environment:

The day after the inauguration, January 21, the Bush Administration signed an agreement that allows factory farms to freely violate any and all clean air standards for the next two years, and forgives these same companies from paying fines for past air pollution violations. In exchange for the freedom to pollute without any restrictions, the deal "requests" that factory farms agree to monitor their air pollution and provide that data to the government.

Bush's "Dirty Air" agreement is outrageous, given that the Clean Air Act already requires factory farms to provide air pollution data, while also requiring facilities to adhere to clean air standards. One of the companies that will benefit the most from this arrangement with the Bush Administration is Tyson Foods, who also happened to be one of the largest donors to the Bush inaugural festivities.

Savvy Veg: Shortly after we printed an article by Ken Roseboro about Radiance Dairy, Got Local Organic Milk?, I came across this article by Radiance Dairy farm owner Francis Thicke in Acres USA. Not very coincidentally, Ken, Francis and myself all live in Fairfield, IA, where we enjoy Radiance Dairy organic milk every day.


Organic farming is now showing up on the radar screen of industrial agriculture, after years of being ridiculed. Of course, this is inevitable now that organic sales in the U.S. are approaching $11 billion per year. But it is a mixed bag. On the one hand, we have been haranguing conventional farmers to get off the chemical bandwagon for years.

Now that the lure of organic premiums is making some of them give it a try, we should be glad, right? Well, on the other hand, organic markets are somewhat fragile, and can easily be overwhelmed, leaving us in the same low-price trap that conventional commodity production has been in for years.

There is, however, a deeper issue here than which chemicals are used or not used on an organic farm. If we can address this deeper issue, we can protect both the integrity of organic farming and our organic markets.

Maine leads the nation with more than 10 percent of the state's dairies, 50 of 420, now producing organic milk. The nation's two largest organic dairy producers are Organic Valley, based in La Farge, Wisconsin, and Horizon Organic Dairy, based in Boulder, Colorado. Both sell milk nationally, unlike Radiance, which refuses to sell even regionally. More about that later.


Farming By Input Substitution

Now that organic farming is coming into vogue, a whole new breed of farmers is taking up organic production. They often approach organic production as just another specialty crop. The result is an increasing emphasis on farming by "input substitution." That means substituting conventional farming inputs with inputs that are approved for organic production, rather than using an array of cultural and biological practices to build soils, control pests and grow nutritious, productive crops--as had been the tradition in organic farming.

Another approach common among farmers who see organic production as a specialty crop is farming by "neglect." That means "organic farming" using neither any inputs nor any additional cultural or biological farming practices. The result, not surprisingly, is decreasing yields and increasing weed and pest pressures. These farmers usually give up "organic" production in a few years, convinced that it doesn't work.

Is organic farming by input substitution or by neglect really organic farming? Technically, yes, by today's working definitions, but not really, by the standards of traditional organic farmers.

As an aside, it is not surprising that studies comparing the nutritional value of organic and conventionally grown food are inconclusive. Clearly, that is because a lot of "organic" food is essentially "conventionally" grown--by input substitution or neglect methods. It is not likely to be nutritionally different from conventional food because it is grown under conditions that mimic conventional production. I suspect, however, that if we were to test food grown on an organic farm that utilized generous amounts of green manure and compost in comparison with food from an NPK conventional farm, the organic food would be found to be superior in taste and nutritional value.


Crossroads

The crossroads where we now find ourselves is whether we will allow organic farming to become wholly defined by the materials that are allowed or not allowed in production. Or, can we take organic farming to a higher level, also defining it as an ecological production system that utilizes a range of biological and cultural methods to build soils, defend against pests, and achieve our production goals. The benefits of such a system should include more nutritious food, increased biodiversity, better protection of the environment and enhancement of the natural resource base, and greater prosperity for organic farmers and for rural communities.

Some claim that the National Organic Program (NOP) has set us on a course of input substitution and industrialization of organic farming. That does not have to be the case. The NOP Final Rule defines organic production as "A production system that...integrat(es) cultural, biological, and mechanical practices that foster cycling of resources, promote ecological balance, and conserve biodiversity." So, clearly, the NOP holds the possibility that organic farming can and should be more than merely following a set of rules regulating which inputs can be used and which ones are outlawed. Obviously, such rules are important, but are only the starting point for defining organic agriculture.


Consumer Perception

At this point, most organic consumers have likely not thought much about the possibility of industrialized organic food production. If anything, they probably assume that organic food is not only produced without the use of synthetic materials, but that it also is produced by family farmers in an environmentally sound manner. Indeed, consumer polls show that one of the main reasons consumers buy organic food is the perceived benefits of organic production for the environment. Can we build off that perception to make it a reality?

If not, if we allow organic production to go down the road of industrial agriculture, we will end up bankrupting our profits, environment, and rural communities as surely as conventional agriculture is accomplishing that today. The consolidated agribusiness corporations are waiting in the wings to find ways to take control of the rapidly growing organic trade, to squeeze out its profitability and send organic farmers down the road to serfdom, right behind our conventional farmer friends.


The Real Cost Of Food

Let's compare the real cost of conventional food to the cost of food grown locally by organic methods that are ecologically sound and protect the environment. The organic food costs more at the point of purchase, if the full cost of producing the food is charged. The conventionally produced food may appear to be cheaper but really is not if you consider all the ways we pay for that "cheap" food. When you pay for conventional food in the grocery store, you are only making your first installment.

You also pay for it in taxes for the massive subsidies for conventional agriculture. You pay for it in subsidies for transporting it (the average piece of food travels 1500 to 2500 miles). You pay for it in taxes for the military to secure oil from foreign lands to make fertilizer, pesticides, and fuel. Then, you pay for it to remove the pesticides and nitrate from drinking water. You pay for it through soil erosion and resultant sediment pollution. You pay for it when massive manure spills pollute rivers and kill fish. You pay for it with the dead zone in the Gulf of Mexico and in damage to estuaries and lakes. How cheap is this conventional food, really?

We should not be reluctant to charge a reasonable price for organic food--if it is more than just warmed-over conventional food produced by input substitution or neglect. We are not going to be able to make a living trying to produce organic food at a price that competes with conventional food, which is made cheap by externalizing costs of production and keeping farm.

If there is to be a future for organic family farmers, we must convince consumers that there is value and benefit to buying organic food that is produced by family farmers in an environmentally friendly manner--and produced locally if possible. We must point out to consumers how industrialized food production--both conventional and organic--externalizes production costs, which they have to pay for later.

If we do not proactively promote organic farming as a production system that is friendly to family farmers, to our natural resource base and to farm animals, organic consumers will not be able to distinguish ecologically produced organic products from those produced by industrial methods.

Worse yet, consumers will wake up one day and realize that the cows producing the milk that is in the organic milk carton--with the picture of cows grazing in a pasture--are really in a concrete confinement facility, that the organic chickens they have been buying are raised in crowded conditions without access to the outdoors, and that their organic tofu is made with soybeans that are grown under conditions that cause excessive soil erosion. Then they will question the integrity of all organic products.


Ecological Organic Agriculture

Small and moderate-sized organic farms have an advantage over industrial-scale organic producers. It is easier for us to diversify and integrate crop and livestock systems in ways that actually enhance the natural resource base, rather than degrade it. It is easier to design a sound grazing system for 50 to100 cows than for 4000. It is easier to provide outdoor access for 500 to 1000 chickens than for 40,000. It is easier to rotate soybeans with soil-building crops on a diversified farm than on an industrial-scale farm that grows only cash row crops.

We have the opportunity now to take the definition of organic farming beyond the discussion of which inputs are acceptable and which are not. To protect the future of organic family farmers, of our natural resource base, and of our communities we should create the perception - and the reality - that organic farming is truly an ecologically based system of farming that provides all the economic, environmental, and social benefits that consumers would like to believe it does.

This original, versatile, and divinely delicious vegan tofu lasagna recipe calls for whole grain noodles, tofu, vegan pesto, and grilled veggies. Vary the veggies as you like. Leave out anything you don't like. If you don't have a grill handy, sauteing works just fine. If pesto isn't possible, use marinara sauce. If you don't have some ingredients, omit or substitute. Add a layer or two of soy cheese if you like a cheesy lasagna.

Use a 9 x 13 glass or stainless steel casserole dish.

Allow 50 minutes prep and 40 minutes cooking time.

Ingredients:

  • 20 oz spelt, rice or other whole grain lasagna noodles

  • Filling:
  • 1 Tblsp olive oil
  • 1 1/2 cup diced onion (optional)
  • 5 tsp garlic, minced (omit or decrease if you're not a big garlic fan)
  • 2 lb extra firm tofu (press firm tofu to make it extra firm) - crumbled
  • 5 cups grilled veggies (zucchini, eggplant, bell peppers, portobello mushrooms, or your favorites)
  • 6 Tblsp roasted Tahini
  • 2 Tblsp fresh minced basil leaves (or 2 tsp dried)
  • 2 Tblsp fresh minced Italian parsley
  • 1 Tblsp nutritional yeast
  • Pepper and salt, to taste
  • 1/2 tsp crushed red pepper flakes

  • Pesto:
  • 2 1/2 cup basil, tightly packed
  • 3/4 cup olive oil
  • 1/2 cup macadamia or pine nuts (walnuts will also work)
  • 3 Tblsp lemon juice
  • 1 Tblsp minced garlic
  • 2 tsp shoyu, or to taste
  • Salt and pepper to taste
  • Pinch cayenne pepper

  • Garnish:
  • 3 - 4 medium tomatoes, 1/2" slice
  • 2 Tblsp black sesame seeds

Loving Preparation:

  1. Boil water in a large pot. Add a drop of olive oil and the noodles. Reduce heat to medium high and cook until pasta is al dente (7 - 8 minutes). Rinse in cold water, set aside.
  2. Grill veggies, slice thin, set aside. Or chop and saute after onions.
  3. Filling: Heat olive oil in a large saute pan. Saute onion and garlic 5 minutes. If you're not grilling the veggies, add them and saute 5 minutes.
  4. Reduce heat, add crumbled tofu, cook 5 minutes, stirring. Mix with remaining filling ingredients and set aside.
  5. Pesto: process all ingredients in a food processor (SV Note: a blender stick also works, with a little pre-chopping. If you don't have either, chop and mix by hand)
  6. Preheat oven to 350 degrees
  7. Lightly oil the pan. Layer noodles, 1/3 pesto, tofu, veggies - twice. Finish with a layer of pasta, then pesto, then garnish with sliced tomatoes and black sesame seeds.
  8. Bake until lasagna is thoroughly heated, approximately 30 minutes. (SV Note: In my experience with lasagna, this can take up to 45 minutes)
  9. Cool 10 - 15 minutes before serving.

Concern regarding the use of anti-perspirants has been a popular topic of discussion in the press recently. Research and consumer advocate groups routinely raise questions concerning ingredients, toxicity, and long-term health risks, as well as their effect on the environment.

The use of anti-perspirants against perspiration, a by-product of our bodies’ natural temperature regulating process, is common in western cultures, to prevent rather than mask perspiration odor. Odor motivated the ancient Egyptians to concoct fragrances by mixing citrus scents with sensually pleasing spices. Ironically, in an opposite example of social development, an early indigenous culture in Brazil, The Bororo People, believed body odor was associated with the life force, breath odor with the soul.

While the Bororo people used body odors as a social marker to identify individuals and their families, western society as early 1910 began marketing 'deodorants' and 'antiperspirants,' claiming 'bad odor' was a hindrance to social success. By the mid eighties, a new consciousness began to emerge that focused on human and environmental health; people began to question the excessive use of chemicals in personal products and their cumulative effect on health and the environment.

Current research finds that there are risks from the continued use of chemical ingredients contained in anti-perspirants. Ingredients such as fragrance, BHT, propylene glycol, talc, silica, and peg-8 distearate are listed as hazards for gastrointestinal or liver function, causing a potential risk to the immune and nervous systems. How can we control perspiration without exposing ourselves to health risks or social embarrassment?

There are natural, chemical free anti-perspirants on the market; environmentally friendly, and not tested on animals. The Environmental Working Group has assessed some of these products as 'low' concern, for example, 'Herbal Magic', 'Certain Dri Antiperspirant', and 'Ban Classic Original'.

Another option, suggested in How it all Vegan, is to use a natural anti-perspirant made from cornstarch and a few drops of any essential oil. (Note: For example: Lavender, Thyme, Rosemary, Tea Tree) Using this home recipe ensures that your anti-perspirant is completely biodegradable and the ingredients may be found in most households, which make it convenient as well as inexpensive.

For centuries, people have waged war on body odor by using fragrances from natural sources. Technological advances have supplied us with an arsenal of antiperspirants in a variety of applications from roll-ons to sprays, creams, pads and dry sticks, even gels, which promise to reduce or eliminate perspiration.

Today, we've begun to realize that our attempts to address one social concern (odor) have caused a more debilitating concern, the harmful affects of anti-perspirants on human and environmental health. It’s time to take the initiative and educate ourselves, learn the issues and discover natural products that are in harmony with a healthy lifestyle for ourselves and the planet.

Spinach (Spinacia oleracea) is a flowering plant in the family of Amaranthaceae. It is native to central and southwestern Asia. It is an annual plant (rarely biennial), which grows to a height of up to 30 cm. Spinach may survive over winter in temperate regions. The leaves are alternate, simple, ovate to triangular-based, very variable in size from about 2-30 cm long and 1-15 cm broad, with larger leaves at the base of the plant and small leaves higher on the flowering stem. The flowers are inconspicuous, yellow-green, 3-4 mm diameter, maturing into a small hard dry lumpy fruit cluster 5-10 mm across containing several seeds.

History

Primitive forms of spinach are found in Nepal and that is probably where the plant was first domesticated. Other than the Indian subcontinent, it was unknown in the ancient world. After the early Muslim conquests the plant spread to other areas. In 647, it was taken to China, possibly by Persians. Muslim Arabs diffused the plant westward up to Islamic Spain. By the eleventh century it was a common plant in the Muslim world.

Spinach is thought to have originated in ancient Persia (Iran). Spinach made its way to China in the 7th century when the king of Nepal sent it as a gift to this country. Spinach has a much more recent history in Europe than many other vegetables. It was only brought to that continent in the 11th century, when the Moors introduced it into Spain. In fact, for a while, spinach was known as "the Spanish vegetable" in England. Spinach was the favorite vegetable of Catherine de Medici, a historical figure in the 16th century. When she left her home of Florence, Italy, to marry the king of France, she brought along her own cooks, who could prepare spinach the ways that she especially liked. Nutrition

Spinach is known as a rich source of iron. However, unlike the popular Popeye myth, Spinach does not contain the most iron compared with other green vegetables.According to the USDA, one 180 gram serving of boiled spinach contains 6.43 mg of iron, whereas one 3 oz. ground hamburger patty contains at most 2.21 mg. Thus spinach does contain a relatively high level of iron, compared to other vegetable and meat sources.

Ultimately, the bioavailability of iron is dependent on its absorption. This is influenced by a number of factors. Iron enters the body in two forms: nonheme iron and heme iron. All of the iron in grains and vegetables, and about three fifths of the iron in animal food sources (meats), is nonheme iron. The much smaller remaining portion from meats is heme iron (Williams, 1993).

The larger portion of dietary iron (nonheme) is absorbed slowly in its many food sources, including spinach. This absorption may vary widely depending on the presence of binders such as fiber or enhancers, such as vitamin C. Therefore, the body's absorption of non-heme iron can be improved by consuming foods that are rich in vitamin C. However, spinach contains high levels of oxalate. Oxalates bind to iron to form ferrous oxalate and remove iron from the body. Therefore, a diet high in oxalate (or phosphate or phytate) leads to a decrease in iron absorption. As a result around 90% of the iron content in Spinach will be released in urine, and not absorbed in the body.

Spinach also has a high calcium content. However, the oxalate content in spinach binds with calcium decreasing its absorption. By way of comparison, the body can absorb about half of the calcium present in broccoli, yet only around 5% of the calcium in spinach. Oxalate is one of a number of factors that can contribute to gout and kidney stones. Equally or more notable factors contributing to calcium stones are: genetic tendency, high intake of animal protein, excess calcium intake, excess vitamin D, prolonged immobility, hyperparathyroidism, renal tubular acidosis, and excess dietary fiber (Williams, 1993).

Spinach still has a large nutritional value, especially when fresh, steamed, or quickly boiled. It is a rich source of vitamin A (and lutein), vitamin C, vitamin E, vitamin K, magnesium, and several vital antioxidants. Recently, opioid peptides called rubiscolins have also been found in spinach. It is a source of folic acid (Vitamin B9), and this vitamin was first purified from spinach. To benefit from the folate in spinach, it is better to steam it than to boil it. Boiling spinach for four minutes can halve the level of folate.

When cooked, the volume of spinach is decreased by three quarters.
Spinach is an excellent source of vitamin K, vitamin A, manganese, folate, magnesium, iron, vitamin C, vitamin B2, calcium, potassium, and vitamin B6. It is a very good source of dietary fiber, copper, protein, phosphorous, zinc and vitamin E. In addition, it is a good source of omega-3 fatty acids, niacin and selenium.

Types of spinach

A distinction can be made between older varieties of spinach and more modern varieties. Older varieties tend to bolt too early in warm conditions. Newer varieties tend to grow more rapidly but have less of an inclination to run up to seed. The older varieties have narrower leaves and tend to have a stronger and more bitter taste. Most newer varieties have broader leaves and round seeds.
There are 3 basic types of Spinach:
Savoy has dark green, crinkly and curly leaves. It is the type sold in fresh bunches in most supermarkets. One heirloom variety of savoy is Bloomsdale, which is somewhat resistant to bolting.
Flat/smooth leaf spinach has broad smooth leaves that are easier to clean than savoy. This type is often grown for canned and frozen spinach, as well as soups, baby foods, and processed foods.
Semi-savoy is a hybrid variety with slightly crinkled leaves. It has the same texture as savoy, but it is not as difficult to clean. It is grown for both fresh market and processing. Five Star is a widely grown variety and has good resistance to running up to seed.

Production, marketing and storage

Spinach is sold loose, bunched, in prepackaged bags, canned, or frozen. Fresh spinach loses much of its nutritional value with storage of more than a few days. While refrigeration slows this effect to about eight days, spinach will lose most of its folate and carotenoid content, so for longer storage it is frozen, cooked and frozen, or canned. Storage in the freezer can be for up to eight months.

Reheating spinach leftovers may cause the formation of poisonous compounds by certain bacteria that thrive on prepared nitrate-rich foods, such as spinach and many other green vegetables. These bacteria can convert the nitrates into nitrites, which may be especially harmful to infants younger than six months. The nitrate-converting enzymes produced by the bacteria can convert even more at elevated temperatures during the second heating. For older children and adults, small concentrations of nitrites are harmless, although formation of nitrosamine compounds from the nitrites could be of concern for adults as well.
The Environmental Working Group reports that spinach is one of the dozen most heavily pesticide-contaminated produce products.The most common pesticides found on spinach are Permethrin, Dimethoate, and DDT.[citation needed]

Spinach in popular culture

Popeye the Sailor Man has a strong affinity for spinach, becoming much stronger after consuming it. This is partially due to the iron content being mistakenly reported ten times the actual value, a value that was unchecked during the 1930s, where it was revealed that the original German scientist had misplaced a decimal point in his calculations. In truth, spinach actually has about the same iron content as a lot of other vegies, and even less than others. Cooked broccoli and cauliflower, for example, have almost double the iron content of spinach. Spinach, along with brussels sprouts and other green vegetables, is often considered in children's shows to be undesirable.

United States

Driven by fresh-market use, the consumption of spinach (Spinacia oleracea) has been on the rise in the United States. Per capita use of fresh-market spinach averaged 1 kilogram during 2004-06, the highest since the mid-1940s. The fresh market now accounts for about three-fourths of all U.S. spinach consumed. Much of the growth over the past decade has been due to sales of triple-washed cello-packed spinach and, more recently, baby spinach. These packaged products have been one of the fastest-growing segments of the packaged salad industry.

The United States is the world’s second-largest producer of spinach, with 3 percent of world output, following China (PRC), which accounts for 85 percent of output. A cool-season crop that grows quickly and can withstand hard frosts, spinach is a native of Asia (likely origin in the Persian region) and has been cultivated in China since at least the 7th century. Spinach use was recorded in Europe as early as the mid-13th century, with seed accompanying colonists to the New World.

California (73 percent of 2004-06 U.S. output), Arizona (12 percent), and New Jersey (3 percent) are the top producing States, with 12 other States reporting production of at least 100 acres (2002 Census). Over the 2004-06 period, U.S. growers produced an average of 867 million pounds of spinach for all uses, with about three-fourths sold into the fresh-market (includes fresh-cut/processed). According to the 2002 Census of Agriculture, spinach was grown on 1,109 U.S. farms -- down 17 percent from 1997, but about the same number as in 1987.

The farm value of the U.S. spinach crop (fresh and processing) averaged $175 million during 2004-06, with fresh market spinach accounting for 94 percent. The value of fresh market spinach has more than doubled over the past decade as stronger demand has boosted production, while inflation-adjusted prices largely remained constant. California accounts for about three-fourths of the value of both the fresh and processing spinach crops.

Like other cool-season leafy crops, most (about 96 percent) of the fresh spinach consumed in the United States is produced domestically. Although rising, imports (largely from Mexico) totaled about 23 million pounds in 2004-06, compared with 3 million pounds in 1994-06. Per capita spinach consumption is greatest in the Northeast and Western US. About 80 percent of fresh-market spinach is purchased at retail and consumed at home, while 91 percent of processed spinach is consumed at home. Per capita spinach use is strongest among Asians, highest among women 40 and older, and weakest among teenage girls.USDA 2004

2006 United States E. coli outbreak

E. coli outbreak kills 1 sickens nearly 100

In September 2006, there was an outbreak of disease caused by the E. coli strain O157:H7 in 21 U.S. states. On 2006-09-14, the E. coli was linked to bags of fresh spinach, after which the FDA issued a warning not to eat uncooked fresh spinach or products containing it. As of 2006-09-24, over a hundred cases have been reported, including five deaths.
The U.S. Food and Drug Administration issued a press release updating the available information. According to the FDA release as on 2006-10-4, 192 cases of E. coli O157:H7 infection have been reported to the Centers for Disease Control and Prevention (CDC) including 30 cases of Hemolytic Uremic Syndrome; there was one death and 98 hospitalizations. The infection affected 26 states. By early 2007, there were 206 illnesses and three deaths attributed to E. coli-tainted spinach.
Based on epidemiological and laboratory evidence, FDA determined that the implicated spinach originated from an organic spinach field grown by Mission Organics and processed by Natural Selection Foods LLC of San Juan Bautista, California. The FDA speculated that the spinach had been tainted by irrigation water contaminated with wild pig feces because feral pigs were seen in the vicinity of the implicated ranch.

2007 United States Salmonella outbreak

On August 30, 2007, 8,000 cartons of spinach (from Metz Fresh, a King City-based grower and shipper, Salinas Valley, California) were recalled after salmonella was discovered upon routine test. Consumer advocates and some lawmakers complained it exposed big gaps in food safety, even if 90% of suspect vegetable didn’t reach the shelves.[11]

Other species called spinach

The name spinach has been applied to a number of leaf vegetables, both related and unrelated to spinach:
Related species
Chard (Beta vulgaris, Amaranthaceae), also known as spinach beet, silverbeet or perpetual spinach.
Orache (Atriplex species, Amaranthaceae), also called "French spinach" or "mountain spinach".
Good King Henry (Chenopodium bonus-henricus, Amaranthaceae) and other Chenopodium species, also called "Lincolnshire spinach".
In Indonesia, the word bayam is applied both to certain species of amaranth commonly eaten as a leafy vegetable, and to spinach, which is rarely seen, only in certain supermarkets but well known from Popeye cartoons.
Unrelated species
New Zealand spinach (Tetragonia, Aizoaceae).
Water spinach (Convolvulaceae).
Malabar spinach (Basellaceae).
The greens of various nightshade, legume and cucurbit species are also known as spinach, wild spinach, African spinach, "Thermadorian spinach" or morogo (in Southern Africa).
